Meeting The Summit Group
Some of you may recall my previous post about a branding/marketing/PR firm called The Summit Group, and how if I ever found myself living within 100 miles of Salt Lake City I would show up on their doorstep with cookies and beg for a job.
Well, I did.
Kind of.
What actually happened is that I moved to Orem, which is 40 miles away, and was crushed to discover that construction along that exact 40 miles of freeway would seriously inhibit my ability to work in Salt Lake. So in favor of practicality and not giving over my entire paycheck to gas, I had begrudgingly resigned myself to working elsewhere.
And then it happened.
The DAY AFTER I moved within that predestined 100 mile radius, I got a comment on my original blog post about The Summit Group from a member of The Summit Group. He said that he had shared my blog post around the office and that I should stop by the next time I was in Utah.
Well as it just so happens, I am in Utah. But I don't believe in showing up unannounced, so I emailed instead.
The next day I got a response from Sharon, their COO, and was invited to meet with her and to see the TSG offices. I immediately started making cookies.
I showed up at the TSG offices in Salt Lake on Tuesday afternoon with cookies in hand. I spent a delightful hour chatting with Sharon, getting a tour of the office, and meeting some of the TSG team.
Everyone I passed asked if I was the Cookie Girl. I was. And it was awesome.
They don't have any positions open right now, and I still have a commute problem, but I admire their company as much as ever and I'm so thrilled to have met them.
Plus its just a great story. Don't you agree?

Balsamic Strawberries
I've always wanted to try this. Apparently the balsamic vinegar is a great balance to the ripe strawberries. Serve it over ice cream, pound cake or eat plain.
Balsamic Strawberries
1 punnet of strawberries (a punnet is one of those little green baskets)
2 Tbsp of balsamic vinegar
2 Tbsp of white sugar
1. Trim the tops and cut the strawberries into quarters.
2. Toss berries the berries in a bowl with the vinegar and sugar. Stir gently until coated.
3. Let sit for at least one hour and no more than four hours. (One hour allows the flavors to blend, after four they just get soggy.) Enjoy!

Chili Cheese Dip
Fourth of July is next Monday, and when I think Fourth of July I think fireworks and food.
So this week I'm going to try to pull together all of the recipes that I plan on bringing to the BBQ on Monday.
The first is Chili Cheese Dip.
At a recent family party, my cousin in-law walked in the door with the ingredients for this dip, it was ready in a blink and gone in 2 blinks.
Seriously, so good.... AND, as per my requirement, super simple. (Unfortunately, this does not qualify under the 'healthy' requirement, but every once in awhile we let that one slide.)
Chili Cheese Dip
1 can of chili (just the normal smallish can size, any type you like)
1 pack of cream cheese (or neufchatel, same thing fewer calories)
1 bag of chips (tortilla or fritos)
1. Open the can of chili and dump it into a microwaveable safe bowl. Cover and microwave for 2 minutes on high.
2. Remove from microwave and add the cream cheese. Stir until combined. Cream cheese should get all soft and melty and blend nicely.
3. Hoard it in the kitchen and eat with chips, because as soon as anone else catches the scent they'll come a runnin'.

Back tomorrow!

I apologize for my long absence. Moving is a lot of work. I am happy to report however, that my new place will be getting a reliable internet connection tomorrow, which I plan to make good use of.

Moving
Dear friends,
Please pardon my brief absence while Husband and I relocate from California to Utah so that he may complete his education at the fine institution of Brigham Young University.
Come the last week of June or so I will emerge from my cave of boxes and packing tape eager to meet with old friends and to make new ones.
If you are in the greater Provo/Orem/Salt Lake area, let's do lunch. Anytime. Seriously. Until I find a job I will have nothing to do except look for jobs. And blog. But I do that anyway.
